Chocolate feels simple because the bar is simple. Cocoa is not. Cocoa trees are sensitive to heat, rainfall, disease, pollination, and shade. The familiar bar depends heavily on specific growing regions and labor systems already under pressure. The wrapper does not show the climate map inside it.
